Sloppy “Veggie” Joes

Happy Friday Eve all!  One of the vendors at the Saturday Farmer’s Market we visit actually saved and gave us that Pepper With a Kick Stand last week for this week’s Wordless Wednesday.  I am not sure which part is funnier ~ the fact she thought of me to set the pepper aside or the pepper itself.

This morning I slept in for the first time all week and had enough time to enjoy my morning with The Husband before heading into work.

I whipped up Healthy Egg McMuffins with Cheese for us. (SF) – 7 points+

  • Oroweat Honey Wheat Thin Bun (totally my favorite bun at the moment)
  • 1 “fried” egg topped with sea salt and black pepper
  • 1 slice “fried” Canadian Bacon
  • 1 slice Low-Fat Sargento Cheese

Totally random fact ~ I always put Hot Sauce on my eggs and omelets but never do on my egg-wiches. 

Today was also another “Serious TV” day so I didn’t have much time to sit at my desk.  I made sure to wave to you all too Winking smile On my way down to the Board Room, I snacked on a banana.

Two meetings later, I couldn’t wait to dive into my Butternut Squash Soup for lunch (SF) (4 points+) ~ I NEVER get tired of it and am always excited whenever I make a batch to freeze some for days like today. 

I also added in a light string cheese for a little protein staying power (SF) – 1 points+

The Husband made up my fruit bowl today ~ he totally made it look professional.

For the past two days I have been craving chips but trying to resist them.  This afternoon, I decided it was time to have some already. 

I grabbed a single serving of Lays BBQ and crunched away (SF + 3 WPA) – 3 points+.

Dinner started with the last of our Sunonomo Cucumber Salad.  (SF)

I cannot believe the last time I made Sloppy Joes was back in 2009.  I grew up on Manwich, but, have found that this Cooking Light Recipe is definitely better than any can you will ever use.

The vegetables add a delicious crunch and texture while the tomato sauce, ketchup, vinegar, Worcestershire and spices make it really taste like a good ole sloppy joe.

I even convinced The Husband to add corn this time too Open-mouthed smile (SF) – 6 points+

These thin buns add a nutty sweetness that is really delicious, but, they really cannot stand up to the Sloppy Joe’s or as The Husband calls this “Sloppy Veggies”. 

He told me next time I should try a little harder to hide all those veggies I put in there Open-mouthed smile

Served up with a side Kale Chips with ketchup to satisfy my crunchy, salty, chip cravings. (SF) – 0 points+ since I didn’t use oil or parmesan.

I am currently having a love/hate relationship with AL.  I feel like my 12 week challenge is so hard to meet even on a day I run 2 miles straight and I am only in week one.  I am pretty sure I’ve cursed at those green lights a few times this week. 

Today I am at 71% of my goal.  More details on my 12 week challenge coming up this weekend.

For now ~ STATS (12 am – 8:30 pm)

  • 2,132 calories burned
  • 5,154 steps taken
  • 3 WPA used, 8 WPA remaining (21 daily points+)

    You are doing GREAT and the last thing you need is a machine bringing you down! 🙂 One thing I have found is that setting realistic goals is so important so that I don’t get discouraged. There are only 24 hours in a day so do what you can and be proud! Have a great weekend!

    Hi Danica,

    I believe you can “alter” the goals of the 12 week challenge. I think it is better to perhaps lower the daily goal so there is no frustration on your part….however; the AL is showing you that someone at your activity level during assessment phase needs to “step it up” to exceed your normal activity routine.

    I just finished my assessment for my ActiveLink. Your 12 week challenge is just that — a 12 week challenge, not a ‘this week’ challenge. Your challenge is to increase your activity so that by the END of the 12 weeks you are earning 6 APs per day. Increase your activity a little bit each day or week.

    I have been reading your blog for some time now. I hardly ever post but had to today because I have been pondering joining weight watchers for a while now and had held off. But after reading about AL and all the great stuff WW has to offer I went ahead and just joined. JUST NOW. AND it’s because of you I decided to join. Well because I really wanted to but you helped me make the final decision. I just wanted to thank you.
